Description
A rich and creamy cake combining dark, milk, and white chocolate mousses that melts in your mouth.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
- 200g dark chocolate, chopped
- 200g milk chocolate, chopped
- 600ml heavy cream, divided
- 2 tsp unflavored gelatin powder
- 4 tbsp water
- 100g dark chocolate, chopped
- 100ml heavy cream
- Chocolate curls or shavings (for decoration)
- Fresh mint leaves (for decoration)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8-inch springform pan.
- In a bowl, combine the flour, cocoa powder, baking powder, and salt.
- In another bowl, cream together the softened butter and granulated sugar until it’s light and fluffy.
- Add the eggs and vanilla extract to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until smooth.
- Pour the batter into the prepared pan and bake for 20-25 minutes. Once done, let the cake cool completely.
- For the mousse layers, bloom the gelatin by mixing it with water in a small bowl.
- Melt the dark chocolate over low heat or in a microwave.
- Warm half of the heavy cream and stir in the bloomed gelatin until it dissolves.
- Mix the melted dark chocolate with the cream and let it cool slightly.
- Whip the remaining heavy cream until soft peaks form and fold it gently into the chocolate mixture.
- Repeat steps 8-11 for the milk chocolate layer.
- Spread the dark chocolate mousse over the cooled cake, followed by the milk chocolate mousse layer.
- Melt the dark chocolate with 100ml heavy cream and pour it on top, allowing it to drip down the sides.
- Chill the cake in the fridge for at least 240 minutes.
- Before serving, garnish with chocolate curls and fresh mint leaves.
Notes
Use high-quality chocolate for the best flavor. Ensure the cake is completely cool before adding the mousse.
