Triple Chocolate Mousse Cake

Description

A rich and creamy cake combining dark, milk, and white chocolate mousses that melts in your mouth.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 200g dark chocolate, chopped
  • 200g milk chocolate, chopped
  • 600ml heavy cream, divided
  • 2 tsp unflavored gelatin powder
  • 4 tbsp water
  • 100g dark chocolate, chopped
  • 100ml heavy cream
  • Chocolate curls or shavings (for decoration)
  • Fresh mint leaves (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch springform pan.
  2. In a bowl, combine the flour, cocoa powder, baking powder, and salt.
  3. In another bowl, cream together the softened butter and granulated sugar until it’s light and fluffy.
  4. Add the eggs and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until smooth.
  6. Pour the batter into the prepared pan and bake for 20-25 minutes. Once done, let the cake cool completely.
  7. For the mousse layers, bloom the gelatin by mixing it with water in a small bowl.
  8. Melt the dark chocolate over low heat or in a microwave.
  9. Warm half of the heavy cream and stir in the bloomed gelatin until it dissolves.
  10. Mix the melted dark chocolate with the cream and let it cool slightly.
  11. Whip the remaining heavy cream until soft peaks form and fold it gently into the chocolate mixture.
  12. Repeat steps 8-11 for the milk chocolate layer.
  13. Spread the dark chocolate mousse over the cooled cake, followed by the milk chocolate mousse layer.
  14. Melt the dark chocolate with 100ml heavy cream and pour it on top, allowing it to drip down the sides.
  15. Chill the cake in the fridge for at least 240 minutes.
  16. Before serving, garnish with chocolate curls and fresh mint leaves.

Notes

Use high-quality chocolate for the best flavor. Ensure the cake is completely cool before adding the mousse.
