A rich and creamy layered cake featuring dark, milk, and white chocolate for a truly indulgent dessert.

- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
- 200g dark chocolate, chopped
- 200g milk chocolate, chopped
- 600ml heavy cream, divided
- 2 tsp unflavored gelatin powder
- 4 tbsp water
- 100g dark chocolate, chopped
- 100ml heavy cream
- Chocolate curls or shavings (for decoration)
- Fresh mint leaves (for decoration)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8-inch springform pan.
- In a bowl, combine the flour, cocoa powder, baking powder, and salt.
- In another bowl, cream the softened butter and granulated sugar together. Then add the eggs and vanilla and mix well.
- Alternately add the dry ingredients and milk to the butter mixture, stirring until smooth.
- Pour the batter into the prepared springform pan and bake for 20-25 minutes. Let the cake cool completely.
- For the Dark & Milk Chocolate Mousse layers: Bloom the gelatin in the water. Melt the dark chocolate and warm half of the cream. Stir in the bloomed gelatin until dissolved, then mix with the melted chocolate and let it cool. Whip the remaining cream and gently fold it into the chocolate mixture. Repeat the same steps with the milk chocolate layer.
- Spread each mousse layer over the cooled cake: start with the dark chocolate, then add the milk chocolate layer on top.
- To make the chocolate glaze, melt the dark chocolate with 100ml of heavy cream over simmering water. Pour it over the mousse layers and let it drip down the sides. Chill the cake in the refrigerator for at least 4 hours.
- Garnish with chocolate curls or shavings and fresh mint leaves. Slice and enjoy!
