Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 200g dark chocolate, chopped
  • 200g milk chocolate, chopped
  • 600ml heavy cream, divided
  • 2 tsp unflavored gelatin powder
  • 4 tbsp water
  • 100g dark chocolate, chopped
  • 100ml heavy cream
  • Chocolate curls or shavings (for garnish)
  • Fresh mint leaves (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8-inch springform pan.
  2. In a bowl, combine the flour, cocoa powder, baking powder, and salt.
  3. In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients alternately with the milk, mixing until just combined.
  6. Pour the batter into the prepared pan and bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool completely.
  7. To make the mousse, bloom the gelatin in 4 tablespoons of water.
  8. Melt the dark chocolate in a bowl over simmering water. Warm half of the heavy cream and stir the bloomed gelatin into it until dissolved. Mix this into the melted dark chocolate and let it cool.
  9. Whip the remaining heavy cream until soft peaks form, then fold it into the dark chocolate mixture gently.
  10. Repeat the steps above with the milk chocolate to create the milk chocolate mousse layer.
  11. Spread both chocolate mousse layers over the cooled cake.
  12. Melt the chopped dark chocolate and remaining heavy cream over simmering water. Pour this over the mousse, allowing it to drizzle down the sides.
  13. Chill the cake in the refrigerator for at least 240 minutes.
  14. Before serving, garnish with chocolate curls and fresh mint leaves.

Ensure all your ingredients are at room temperature for better mixing. Store leftovers in an airtight container in the refrigerator for 3-4 days.
