Ingredients

Scale
  • 1 3/4 cups (220g) all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup (200g) granulated sugar
  • 1/2 cup (50g) unsweetened cocoa powder
  • 2 large eggs
  • 1 cup (240ml) buttermilk
  • 1/2 cup (120ml) vegetable oil
  • 2 tsp vanilla extract
  • 1 cup (240ml) boiling water
  • 8 oz (225g) dark chocolate (60-70% cocoa), chopped
  • 1 cup (240ml) heavy cream
  • 1 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 8 oz (225g) milk chocolate, chopped
  • 8 oz (225g) white chocolate, chopped

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  2. In a large mixing bowl, sift together flour, baking powder, baking soda, salt, sugar, and cocoa powder.
  3. In another bowl, whisk eggs, buttermilk, oil, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until smooth.
  5. Gradually add boiling water, mixing well until the batter is thin.
  6. Pour the batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  8. For the dark chocolate mousse, melt dark chocolate in a heatproof bowl.
  9. Whip cream with powdered sugar and vanilla until stiff peaks form; fold into melted dark chocolate. Chill.
  10. Repeat melting and folding for milk chocolate and white chocolate mousse. Chill each.
  11. Assemble by placing one cooled cake layer on a platter, spreading dark chocolate mousse, then add the second cake layer followed by milk chocolate mousse, and finish with white chocolate mousse.
  12. Smooth the top and chill for at least 4 hours.
  13. Decorate before serving.
  14. Slice, serve, and enjoy!

Notes

Use high-quality chocolate for the best flavor. Ensure your cream is cold when whipping for best results.
