A rich and creamy cake combining dark, milk, and white chocolate in a delicious mousse, perfect for special occasions.

- 1 3/4 cups (220g) all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup (200g) granulated sugar
- 1/2 cup (50g) unsweetened cocoa powder
- 2 large eggs
- 1 cup (240ml) buttermilk
- 1/2 cup (120ml) vegetable oil
- 2 tsp vanilla extract
- 1 cup (240ml) boiling water
- 8 oz (225g) dark chocolate (60-70% cocoa), chopped
- 1 cup (240ml) heavy cream
- 1 tbsp powdered sugar
- 1 tsp vanilla extract
- 8 oz (225g) milk chocolate, chopped
- 8 oz (225g) white chocolate, chopped
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
- In a large mixing bowl, sift together flour, baking powder, baking soda, salt, sugar, and cocoa powder.
- In another bowl, whisk eggs, buttermilk, oil, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until smooth.
- Gradually add boiling water, mixing well until the batter is thin.
- Pour the batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- For the dark chocolate mousse, melt dark chocolate in a heatproof bowl.
- Whip cream with powdered sugar and vanilla until stiff peaks form; fold into melted dark chocolate. Chill.
- Repeat melting and folding for milk chocolate and white chocolate mousse. Chill each.
- Assemble by placing one cooled cake layer on a platter, spreading dark chocolate mousse, then add the second cake layer followed by milk chocolate mousse, and finish with white chocolate mousse.
- Smooth the top and chill for at least 4 hours.
- Decorate before serving.
- Slice, serve, and enjoy!
