- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup granulated sugar
- 1/2 cup unsalted butter (softened)

- 1 tsp vanilla extract
- 1 cup buttermilk
- 6 oz dark chocolate (70% cocoa or higher)
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract (for dark chocolate mousse)
- 6 oz milk chocolate
- 2 tbsp powdered sugar (for milk chocolate mousse)
- 6 oz white chocolate
- 2 tbsp powdered sugar (for white chocolate mousse)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan.
- In a bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, cream together the softened butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well with the vanilla extract.
- Gradually add dry ingredients alternating with buttermilk, starting and ending with the dry mix.
- Pour the batter into the prepared pan and bake for 25-30 minutes until a toothpick comes out clean.
- Let the cake cool completely in the pan.
- For the Dark Chocolate Mousse: Melt the dark chocolate in a heatproof bowl over simmering water or in the microwave. Let it cool slightly. In another bowl, whip heavy cream, powdered sugar, and vanilla until stiff peaks form. Gently fold the whipped cream into the melted chocolate.
- For the Milk Chocolate Mousse: Repeat the melting process for the milk chocolate, then fold in whipped cream and powdered sugar until smooth.
- For the White Chocolate Mousse: Melt the white chocolate and fold in whipped cream and powdered sugar.
- Assemble the Cake: Place the cooled cake on a serving plate. Spread the dark chocolate mousse over the top and refrigerate for 30 minutes. Next, spread on the milk chocolate mousse, refrigerate again for 30 minutes, and finally spread the white chocolate mousse. Refrigerate the assembled cake for at least 4 hours or overnight to set.
- Serve the Cake: Slice into pieces and serve the mousse cake. Garnish with chocolate shavings or a dusting of cocoa powder for added flair.
