A delightful dessert that layers three different chocolate mousses made with dark, milk, and white chocolate.

- 2 cups chocolate cookie crumbs
- 1/4 cup unsalted butter, melted
- 1 cup dark chocolate, melted
- 1 cup milk chocolate, melted
- 1 cup white chocolate, melted
- 3 cups heavy cream, divided
- 1/4 cup powdered sugar (for each mousse layer)
- 1/2 cup heavy cream (for ganache)
- 1/2 cup dark chocolate, chopped
Instructions
- Prepare the crust by mixing chocolate cookie crumbs with melted butter. Press the mixture into the bottom of a springform pan and refrigerate.
- For each mousse layer, whip 1 cup of heavy cream with 1/4 cup powdered sugar until soft peaks form, then fold in the melted chocolate for each flavor (dark, milk, and white).
- Spread the dark chocolate mousse evenly over the crust, followed by the milk chocolate mousse, and finally the white chocolate mousse. Refrigerate for 4-6 hours, or until fully set.
- Prepare the ganache by heating the heavy cream and pouring it over the chopped dark chocolate. Let it sit for 2-3 minutes, then stir until smooth and pour over the top of the set mousse cake.
- Garnish with fresh raspberries, chocolate swirls, and mint leaves before serving.
Notes
The cake can be made a day ahead and stored in the fridge. Avoid freezing to maintain texture.
