Description

A rich and delicious dessert combining dark, milk, and white chocolate mousses over a chocolate sponge cake.


Ingredients

  • 150g dark chocolate (70% cocoa)
  • 3 large egg yolks
  • 3 tablespoons granulated sugar
  • 1 cup heavy whipping cream
  • 150g milk chocolate
  • 3 large egg yolks
  • 2 tablespoons granulated sugar
  • 1 cup heavy whipping cream
  • 150g white chocolate
  • 3 large egg yolks
  • 1 tablespoon granulated sugar
  • 1 cup heavy whipping cream
  • 200g chocolate sponge cake or brownie (store-bought or homemade)

Instructions

  1. Prepare the Dark Chocolate Mousse: Melt dark chocolate in a heatproof bowl over simmering water, stirring until smooth. Let cool slightly. Whip heavy cream until soft peaks form, then set aside. In a separate bowl, whisk egg yolks and sugar until pale and creamy. Gradually fold in melted chocolate, then gently fold in whipped cream. Chill for 30 minutes.
  2. Prepare the Milk Chocolate Mousse: Repeat the same steps as above, using milk chocolate, and chill for 30 minutes.
  3. Prepare the White Chocolate Mousse: Repeat the same steps as above, using white chocolate, and chill for 30 minutes.
  4. Assemble the Cake: Place chocolate sponge cake at the bottom of a 9-inch springform pan. Spread dark chocolate mousse evenly over the cake base. Chill for 15 minutes to set. Layer milk chocolate mousse on top of the dark chocolate layer. Chill for 15 minutes. Add white chocolate mousse, smoothing the top with a spatula. Chill the entire cake for at least 4 hours or overnight.
  5. Decorate and Serve: Carefully remove the cake from the pan and garnish with chocolate shavings, cocoa powder, or fresh berries. Slice and serve chilled.

Notes

Use high-quality chocolate for the best flavor. Store leftovers in the refrigerator for up to 3 days.
