Ingredients

  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/4 cup melted butter

  • 1/2 tsp vanilla extract

  • 1/2 cup dark chocolate, melted
  • 1/4 cup powdered sugar (for dark chocolate mousse)
  • 1 cup heavy cream (for milk chocolate mousse)
  • 1/2 cup milk chocolate, melted
  • 1/4 cup powdered sugar (for milk chocolate mousse)
  • 1 cup heavy cream (for white chocolate mousse)
  • 1/2 cup white chocolate, melted
  • 1/4 cup powdered sugar (for white chocolate mousse)
  • Cocoa powder, for dusting
  • Fresh raspberries
  • Edible flowers, for decoration

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a bowl, mix together the flour, cocoa powder, and sugar.
  3. Add the melted butter, eggs, and vanilla extract, stirring until smooth.
  4. Pour the mixture into the prepared pan and bake for 20–25 minutes. Let the base cool completely.
  5. For the dark chocolate mousse, whip 1 cup of heavy cream with 1/4 cup of powdered sugar until stiff peaks form. Carefully fold in the melted dark chocolate, then spread this mousse over the cooled base. Chill to set.
  6. Repeat this process with the milk chocolate mousse, using 1 cup of heavy cream and 1/4 cup of powdered sugar, then folding in melted milk chocolate.
  7. Repeat again with the white chocolate mousse using 1 cup of heavy cream, 1/4 cup of powdered sugar, and melted white chocolate. Make sure each layer is chilled before adding the next.
  8. Once all the mousse layers are set, dust the top with cocoa powder and decorate with fresh raspberries and edible flowers.

Notes

Ensure all your chocolate is well melted and at room temperature. Be gentle while folding in the chocolate to keep the whipped cream’s volume.
