- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup sugar
- 6 tbsp butter, melted
- 24 oz cream cheese, softened
- 1 cup sugar
- 1 cup sour cream
- 1 tsp vanilla extract
- 4 large eggs
- 8 oz semi-sweet chocolate, melted
- 1/2 cup milk chocolate chips, melted
- 1/2 cup dark chocolate chips, melted
- 1/2 cup heavy cream
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 325°F (160°C).
- Mix chocolate cookie crumbs, sugar, and melted butter together in a bowl. Press the mixture into the bottom of a springform pan. Bake for 10 minutes and let cool.
- Beat together the softened cream cheese, sugar, sour cream, and vanilla extract until smooth.
- Add the eggs one at a time, mixing well after each addition. Stir in melted chocolate and chocolate chips.
- Pour the filling over the cooled crust and bake for 1 hour and 10 minutes. Cool and refrigerate for at least 4 hours.
- For the ganache, heat the heavy cream and pour it over the semi-sweet chocolate chips. Stir until smooth. Pour over the chilled cheesecake before serving.
Notes
For best results, use room temperature ingredients and do not overbake. For serving, add fresh berries or a drizzle of chocolate or caramel sauce.
