A rich and creamy cheesecake combining three types of chocolate, perfect for chocolate lovers and special occasions.

- 20 Oreo cookies
- 5 tbsp butter, melted
- 1/3 cup unsweetened cocoa powder
- 1 3/4 cups granulated sugar
- 24 oz cream cheese, room temperature
- 8 oz bittersweet or semi-sweet chocolate, melted
- 1/2 cup heavy cream
- 1 tsp vanilla extract
- 4 large eggs
- 1 cup sour cream
- 3/4 cup milk chocolate chips
- 1/2 cup heavy cream
- 1 cup + 2 tbsp heavy cream, divided
- 1/2 cup milk chocolate chips
- Chocolate curls (optional)
Instructions
- Preheat your oven to 350°F (175°C). Crush Oreo cookies and mix with melted butter. Press into the bottom of a 9-inch springform pan and bake for 8-10 minutes. Let cool completely.
- In a mixing bowl, whisk together cocoa powder and sugar. Add cream cheese and mix until smooth. Gradually add melted chocolate, heavy cream, and vanilla extract. Beat in eggs one at a time, then fold in sour cream. Pour mixture over the crust.
- Place springform pan in a larger roasting pan filled with hot water. Bake at 325°F (160°C) for 1.5 hours. Cool in the oven for 1 hour, then refrigerate for at least 8 hours.
- Heat milk chocolate chips and 1/2 cup of heavy cream until smooth. Spread ganache over chilled cheesecake and let set.
- Whip remaining heavy cream until soft peaks form. Fold in cooled chocolate mixture and pipe over ganache.
- If desired, garnish with chocolate curls. Slice and enjoy!

Ensure cream cheese is at room temperature to avoid lumps. Use a water bath for even cooking and moisture.
