A decadent dessert combining rich dark, milk, and white chocolate into a luxurious cheesecake.

- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter (melted)
- 24 oz cream cheese (softened)
- 1 cup sour cream
- 3/4 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup heavy cream
- 6 oz dark chocolate (chopped)
- 6 oz milk chocolate (chopped)
- 6 oz white chocolate (chopped)
- Chocolate shavings or chips (for topping)
- Whipped cream (for topping)
Instructions
- Preheat your oven to 325°F (165°C).
- In a bowl, combine the chocolate cookie crumbs, 1/4 cup sugar, and melted butter. Mix well, then press into the bottom of a springform pan. Bake for 10 minutes and let cool.
- Melt the dark, milk, and white chocolate separately until smooth. Allow to cool slightly.
- In another bowl, beat the softened cream cheese, sour cream, and 3/4 cup sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, then mix in the melted chocolates. Gently fold in the heavy cream.
- Pour the filling over the cooled crust and bake for 55-60 minutes. The cheesecake should be set but still slightly wobbly in the center. Leave it in the oven for another hour with the door slightly open. Let it cool at room temperature for one hour before refrigerating for at least four hours.
- Top with chocolate shavings or chips and whipped cream if desired. Slice and enjoy!
Notes
Make sure to use room temperature cream cheese for a smooth texture. Letting it cool in the oven helps prevent cracks.
