Description

Ingredients

  • 2 cups chocolate cookie crumbs (such as Oreos, crushed)
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 24 oz (3 packages) cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 8 oz dark chocolate, melted and slightly cooled
  • 2 tablespoons cocoa powder
  • 8 oz milk chocolate, finely chopped
  • 1/2 cup heavy cream
  • 1 teaspoon unsalted butter (for shine)

Instructions

  1. Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. In a bowl, combine cookie crumbs, melted butter, and sugar. Press this mixture into the bottom of the pan to form a crust. Bake for 10 minutes and then let it cool.
  3. In another bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, mixing on low speed after each addition. Stir in vanilla extract and sour cream. Finally, mix in the melted dark chocolate and cocoa powder. Pour the filling over the cooled crust.
  4. Wrap the pan in aluminum foil and place it in a larger dish filled with hot water, halfway up the sides. Bake for 55-60 minutes until the cheesecake is slightly jiggly. Let it cool in the oven for 1 hour, then refrigerate for at least 6 hours or overnight.
  5. For the ganache, heat the heavy cream until steaming. Pour it over the chopped milk chocolate and let it sit for 2 minutes. Stir until smooth, then mix in the butter and pour over the chilled cheesecake. Chill for another 30 minutes before serving.

Notes

Serve chilled; garnish with chocolate shavings or berries. Perfect with coffee or milk.
