A rich and creamy dessert for chocolate lovers, featuring a crunchy Oreo crust and a decadent chocolate ganache.

- 32 Oreos
- 6 tbsp (84 g) salted butter, melted
- 32 oz. (907 g) cream cheese, room temperature
- 1 cup (200 g) granulated sugar
- 1 tbsp (8 g) cornstarch
- 8 oz. (226 g) 60% cocoa dark chocolate, melted
- 1/3 cup (82 g) sour cream
- 1 tbsp vanilla extract
- 3 eggs
- 3 egg yolks
- 4 oz. (113 g) 60% cocoa dark chocolate, chopped
- 1/2 cup (120 ml) heavy cream
- 3 oz. (85 g) 60% cocoa dark chocolate, chopped
- 1/2 cup (120 ml) heavy cream
Instructions
- Preheat the oven to 350°F (175°C) and pulse the Oreos in a food processor until finely ground. Mix with melted butter, press into a 9-inch springform pan, and bake for 10 minutes.
- In a stand mixer, beat cream cheese, sugar, and cornstarch until smooth. Add vanilla, sour cream, and melted dark chocolate, mixing well. Incorporate eggs and egg yolks one at a time.
- Pour cheesecake batter into the cooled crust. Place in a roasting pan, adding boiling water around the sides, and bake for 1 hour. Turn off the oven, crack the door, and let cool for 1 hour before refrigerating for at least 8 hours.
- For the whipped ganache, heat 1/2 cup of heavy cream until boiling, pour over chopped chocolate, and stir until smooth. Let cool and whip until fluffy.
- For the ganache topping, heat remaining heavy cream, pour over chopped chocolate, stir until smooth, and pour over the chilled cheesecake. Chill for 20 minutes.
- Pipe whipped ganache around the edges of the cheesecake. Serve chilled.
Notes
Use room temperature cream cheese for a smoother batter. Don’t skip the water bath to prevent cracks.
