Description

A rich and creamy dessert for chocolate lovers, featuring a crunchy Oreo crust and a decadent chocolate ganache.


Ingredients

  • 32 Oreos
  • 6 tbsp (84 g) salted butter, melted
  • 32 oz. (907 g) cream cheese, room temperature
  • 1 cup (200 g) granulated sugar
  • 1 tbsp (8 g) cornstarch
  • 8 oz. (226 g) 60% cocoa dark chocolate, melted
  • 1/3 cup (82 g) sour cream
  • 1 tbsp vanilla extract
  • 3 eggs
  • 3 egg yolks
  • 4 oz. (113 g) 60% cocoa dark chocolate, chopped
  • 1/2 cup (120 ml) heavy cream
  • 3 oz. (85 g) 60% cocoa dark chocolate, chopped
  • 1/2 cup (120 ml) heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C) and pulse the Oreos in a food processor until finely ground. Mix with melted butter, press into a 9-inch springform pan, and bake for 10 minutes.
  2. In a stand mixer, beat cream cheese, sugar, and cornstarch until smooth. Add vanilla, sour cream, and melted dark chocolate, mixing well. Incorporate eggs and egg yolks one at a time.
  3. Pour cheesecake batter into the cooled crust. Place in a roasting pan, adding boiling water around the sides, and bake for 1 hour. Turn off the oven, crack the door, and let cool for 1 hour before refrigerating for at least 8 hours.
  4. For the whipped ganache, heat 1/2 cup of heavy cream until boiling, pour over chopped chocolate, and stir until smooth. Let cool and whip until fluffy.
  5. For the ganache topping, heat remaining heavy cream, pour over chopped chocolate, stir until smooth, and pour over the chilled cheesecake. Chill for 20 minutes.
  6. Pipe whipped ganache around the edges of the cheesecake. Serve chilled.

Notes

Use room temperature cream cheese for a smoother batter. Don’t skip the water bath to prevent cracks.
