A rich and creamy triple-layered cheesecake that combines three forms of chocolate, perfect for any special occasion.

- 1 ½ cups chocolate cookie crumbs (Oreos or chocolate grahams)
- ¼ cup sugar
- ½ cup unsalted butter, melted
- 3 (8 oz) cream cheese blocks, softened
- 1 cup sour cream
- ¾ cup sugar
- ½ cup cocoa powder
- 3 large eggs
- 1 tsp vanilla extract
- ½ cup heavy cream
- ½ cup melted semi-sweet chocolate chips
- ½ cup heavy cream (for ganache)
- 4 oz semi-sweet chocolate, chopped
Instructions
- Preheat your oven to 325°F (163°C).
- In a bowl, mix the chocolate cookie crumbs, sugar, and melted butter until well combined.
- Press this mixture into the bottom of a 9″ springform pan. Bake for 8–10 minutes then cool completely.
- In another bowl, beat the softened cream cheese and sugar until smooth.
- Add in the sour cream, cocoa powder, and vanilla extract; mix well.
- Add the eggs one at a time, mixing after each addition.
- Stir in the heavy cream and melted chocolate until fully combined.
- Pour this mixture over the cooled crust and bake for 50–60 minutes. The center should be slightly jiggly.
- Turn off the oven, crack the door open, and let it cool for 1 hour.
- Once cooled, refrigerate for at least 4 hours or overnight.
- For the ganache, heat ½ cup of heavy cream until simmering, then pour it over the chopped chocolate. Let it sit for 1-2 minutes before stirring until smooth.
- Allow the ganache to cool slightly, then pour over the chilled cheesecake. Chill for 1 hour to set.
Notes
Serve with chocolate curls, whipped cream, or fresh berries. Store leftovers in the fridge for up to 3 days.
