Description

A rich and creamy triple-layered cheesecake that combines three forms of chocolate, perfect for any special occasion.


Ingredients

  • 1 ½ cups chocolate cookie crumbs (Oreos or chocolate grahams)
  • ¼ cup sugar
  • ½ cup unsalted butter, melted
  • 3 (8 oz) cream cheese blocks, softened
  • 1 cup sour cream
  • ¾ cup sugar
  • ½ cup cocoa powder
  • 3 large eggs
  • 1 tsp vanilla extract
  • ½ cup heavy cream
  • ½ cup melted semi-sweet chocolate chips
  • ½ cup heavy cream (for ganache)
  • 4 oz semi-sweet chocolate, chopped

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, mix the chocolate cookie crumbs, sugar, and melted butter until well combined.
  3. Press this mixture into the bottom of a 9″ springform pan. Bake for 8–10 minutes then cool completely.
  4. In another bowl, beat the softened cream cheese and sugar until smooth.
  5. Add in the sour cream, cocoa powder, and vanilla extract; mix well.
  6. Add the eggs one at a time, mixing after each addition.
  7. Stir in the heavy cream and melted chocolate until fully combined.
  8. Pour this mixture over the cooled crust and bake for 50–60 minutes. The center should be slightly jiggly.
  9. Turn off the oven, crack the door open, and let it cool for 1 hour.
  10. Once cooled, refrigerate for at least 4 hours or overnight.
  11. For the ganache, heat ½ cup of heavy cream until simmering, then pour it over the chopped chocolate. Let it sit for 1-2 minutes before stirring until smooth.
  12. Allow the ganache to cool slightly, then pour over the chilled cheesecake. Chill for 1 hour to set.

Notes

Serve with chocolate curls, whipped cream, or fresh berries. Store leftovers in the fridge for up to 3 days.
