- 2 cups chocolate cookie crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 4 oz dark chocolate, melted
- 4 oz milk chocolate, melted
- 4 oz white chocolate, melted
- Chocolate shavings (optional)
- Whipped cream (optional)
Instructions
- Preheat your oven to 325°F (165°C). Grease a 9-inch springform pan.
- In a medium bowl, mix chocolate cookie crumbs, sugar, and melted butter. Press this mixture firmly into the bottom of your prepared pan.
- In a large bowl, beat together the cream cheese and sugar until smooth.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the sour cream and vanilla extract until the mixture is smooth and creamy.
- Divide the batter into three bowls. Mix the melted dark chocolate into one bowl, milk chocolate into the second, and white chocolate into the third.
- Pour the dark chocolate layer into the crust and spread evenly. Carefully add the milk chocolate layer on top, spreading gently. Finally, spoon the white chocolate layer on top and smooth it out.
- Bake for 50-60 minutes or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour.
- After that, cool it completely at room temperature before refrigerating for at least 4 hours or overnight.
- Top the cheesecake with chocolate shavings and whipped cream before serving.
Notes
Make sure your cream cheese is very soft for a smooth filling and don’t skip leaving the cheesecake in the oven after baking to help prevent cracks.
