Description

Ingredients

  • 1 1/2 cups (150g) chocolate cookie crumbs (such as Oreos)
  • 6 tbsp (85g) unsalted butter, melted
  • 2 tbsp granulated sugar
  • 16 oz (450g) cream cheese, softened
  • 3/4 cup (150g) granulated sugar
  • 1 cup (240ml) heavy cream
  • 3 large eggs
  • 4 oz (115g) dark chocolate, melted
  • 4 oz (115g) milk chocolate, melted
  • 4 oz (115g) white chocolate, melted
  • 1 tsp vanilla extract
  • 1/2 cup (120ml) heavy cream (for ganache)
  • 4 oz (115g) semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. Mix chocolate cookie crumbs, melted butter, and sugar together. Press this mixture into the bottom of the pan. Bake for 8-10 minutes and allow to cool.
  3. In a bowl, beat softened cream cheese and granulated sugar until smooth.
  4. Add the heavy cream, then mix in the eggs one at a time.
  5. Split the filling into three portions; add melted dark chocolate to one, milk chocolate to another, and white chocolate to the last. Add the vanilla extract and mix until smooth.
  6. Pour the dark chocolate filling into the crust first. Then, layer the milk chocolate filling on top and swirl for a pretty effect.
  7. Top with the white chocolate filling and swirl again.
  8. Place the springform pan in a larger baking dish and fill it with hot water. Bake for 55-65 minutes or until the edges are set and the center is slightly jiggly.
  9. Cool in the oven with the door slightly open for 1 hour, then refrigerate for at least 4 hours.
  10. Heat the heavy cream until simmering. Pour it over the chocolate chips and stir until smooth.
  11. Allow it to cool slightly, then pour it over the chilled cheesecake.
  12. Drizzle ganache over the cheesecake and garnish as desired. Enjoy every bite!
