Description
A rich and creamy cheesecake combining dark chocolate, milk chocolate, and cocoa powder—a true chocoholic’s dream!
Ingredients
Scale
- 2 cups chocolate cookie crumbs
- 6 tablespoons unsalted butter, melted
- 2 tablespoons granulated sugar
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 8 oz dark chocolate, melted and slightly cooled
- 2 tablespoons cocoa powder
- 8 oz milk chocolate, finely chopped
- 1/2 cup heavy cream
- 1 teaspoon unsalted butter
Instructions
- Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and line it with parchment paper.
- In a bowl, mix together the chocolate cookie crumbs, melted butter, and sugar, then press firmly into the bottom of the pan. Bake for 10 minutes, then let cool.
- In another bowl, beat the cream cheese and sugar together until smooth. Add eggs one at a time, mixing slowly. Stir in the vanilla extract, sour cream, melted dark chocolate, and cocoa powder. Pour this mixture over the cooled crust.
- Wrap the springform pan in foil and place it in a larger baking dish filled with hot water. Bake for 55-60 minutes until set but jiggly in the center. Turn off the oven and let cool inside for 1 hour. Chill in the fridge for at least 6 hours or overnight.
- To make ganache, heat heavy cream until steaming, pour over chopped milk chocolate, and stir until smooth. Mix in butter and pour over chilled cheesecake. Chill for another 30 minutes before serving.
Notes
For a lighter version, substitute low-fat cream cheese and sour cream, and consider adding raspberry sauce for a fruity twist.
