A rich and creamy dessert combining three types of chocolate for a truly indulgent experience.
Ingredients

- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup sugar
- 6 tbsp butter, melted
- 24 oz cream cheese, softened
- 1 cup sugar
- 1 cup sour cream
- 1 tsp vanilla extract
- 4 large eggs
- 8 oz semi-sweet chocolate, melted
- 1/2 cup milk chocolate chips, melted
- 1/2 cup dark chocolate chips, melted
- 1/2 cup heavy cream
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 325°F (160°C).
- Mix the chocolate cookie crumbs, sugar, and melted butter in a bowl for the crust.
- Press the mixture into the bottom of a springform pan. Bake for 10 minutes and set aside to cool.
- Beat softened cream cheese and sugar in a large bowl until smooth.
- Add sour cream, vanilla extract, and eggs. Mix until combined.
- Stir in melted semi-sweet chocolate, milk chocolate chips, and dark chocolate chips.
- Pour the filling into the cooled crust.
- Bake for about 1 hour and 10 minutes, or until set.
- Allow to cool at room temperature, then refrigerate for at least 4 hours.
- For the ganache, heat the heavy cream until just below boiling.
- Pour hot cream over semi-sweet chocolate chips and stir until smooth.
- Pour ganache over the cooled cheesecake.
- Chill again before serving.
Notes
Serve with whipped cream or extra chocolate chips on top. Store leftovers in the refrigerator for up to 5 days.
