  • 24 ounces cream cheese, room temperature
  • 8 ounces bittersweet or semi-sweet chocolate, melted
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 3/4 cup milk chocolate chips
  • 1/2 cup heavy cream (for ganache)
  • 1 cup plus 2 tablespoons heavy cream (for whipped cream)
  • 1/2 cup milk chocolate chips (for whipped cream)
  • Chocolate curls (optional)

Instructions

  1. Prepare the crust: Blend the Oreo cookies with melted butter. Press mixture into the bottom of a springform pan and bake for 10 minutes. Let it cool.
  2. Make the filling: In a large bowl, mix the cocoa powder and sugar. Add softened cream cheese and blend until smooth. Stir in melted bittersweet chocolate and heavy cream. Mix in eggs one at a time, followed by sour cream.
  3. Bake the cheesecake: Pour filling over the cooled Oreo crust. Place in a water bath and bake at 325°F for 60 minutes or until set. Cool completely.
  4. Create the ganache: Combine milk chocolate chips and heavy cream in a microwave-safe bowl and heat until melted and smooth. Spread ganache over cheesecake.
  5. Finish with whipped cream: Whip heavy cream and melted chocolate until stiff peaks form. Pipe onto cheesecake and garnish with chocolate curls if desired.
  6. Chill before serving: Place in the fridge to chill before slicing and serving.

Notes

Ensure cream cheese is at room temperature for easier mixing. Use a water bath while baking to prevent cracking.
