Description

A rich and creamy cheesecake combining three types of chocolate for an unforgettable treat.


Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup sugar
  • 6 tbsp butter, melted
  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 4 large eggs
  • 8 oz semi-sweet chocolate, melted
  • 1/2 cup milk chocolate chips, melted
  • 1/2 cup dark chocolate chips, melted
  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix the chocolate cookie crumbs, 1/4 cup sugar, and melted butter.
  3. Press this mixture into the bottom of a springform pan and bake for 10 minutes.
  4. Set the crust aside to cool.
  5. In another bowl, beat the cream cheese and 1 cup sugar until smooth.
  6. Add the sour cream and vanilla extract, and mix well.
  7. Beat in the eggs one at a time until blended.
  8. Stir in the melted semi-sweet chocolate and chocolate chips.
  9. Pour the filling into the cooled crust.
  10. Bake for 1 hour, or until set.
  11. Cool completely, then chill for at least 4 hours.
  12. For the ganache, heat the heavy cream until just boiling, then pour it over the chocolate chips in a bowl.
  13. Stir until smooth and pour over the chilled cheesecake.
  14. Serve and enjoy!

Notes

For serving, consider adding whipped cream or fresh berries. Store tightly covered in the refrigerator for up to one week.
