A rich and creamy cheesecake combining three types of chocolate for an unforgettable treat.
Ingredients

- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup sugar
- 6 tbsp butter, melted
- 24 oz cream cheese, softened
- 1 cup sugar
- 1 cup sour cream
- 1 tsp vanilla extract
- 4 large eggs
- 8 oz semi-sweet chocolate, melted
- 1/2 cup milk chocolate chips, melted
- 1/2 cup dark chocolate chips, melted
- 1/2 cup heavy cream
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix the chocolate cookie crumbs, 1/4 cup sugar, and melted butter.
- Press this mixture into the bottom of a springform pan and bake for 10 minutes.
- Set the crust aside to cool.
- In another bowl, beat the cream cheese and 1 cup sugar until smooth.
- Add the sour cream and vanilla extract, and mix well.
- Beat in the eggs one at a time until blended.
- Stir in the melted semi-sweet chocolate and chocolate chips.
- Pour the filling into the cooled crust.
- Bake for 1 hour, or until set.
- Cool completely, then chill for at least 4 hours.
- For the ganache, heat the heavy cream until just boiling, then pour it over the chocolate chips in a bowl.
- Stir until smooth and pour over the chilled cheesecake.
- Serve and enjoy!
Notes
For serving, consider adding whipped cream or fresh berries. Store tightly covered in the refrigerator for up to one week.
