Description

A decadent delight for chocolate lovers featuring layers of chocolate cake, mousse, and ganache.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 8 oz semi-sweet chocolate, chopped
  • 1 1/2 cups heavy cream
  • 1/4 cup powdered sugar
  • 6 oz semi-sweet chocolate, chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add in the eggs, milk, oil, and vanilla extract. Beat until smooth.
  3. Gradually pour in the boiling water and mix until thin. Pour the batter into prepared pans.
  4. Bake for 30-35 minutes or until a toothpick inserted comes out clean. Let the cakes cool completely in the pans.
  5. To prepare the mousse, melt the semi-sweet chocolate over a double boiler or in the microwave. Cool to room temperature.
  6. In another bowl, whip heavy cream with powdered sugar until soft peaks form. Fold in the cooled chocolate gently until smooth.
  7. For the ganache, pour heavy cream over chopped semi-sweet chocolate, let it sit for 2-3 minutes, then stir until smooth.
  8. Assemble the cake by placing one cake layer on a serving plate, spreading mousse on top, and then adding the second layer. Pour ganache over the top allowing it to drip down the sides.
  9. Decorate with chocolate shavings or cocoa powder. Let set for 30 minutes to an hour before serving.

Notes

Use high-quality chocolate for best flavor. Don’t overmix the batter, and ensure the cakes cool completely before frosting.
