- 1 3/4 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 8 oz semi-sweet chocolate, chopped
- 1 1/2 cups heavy cream
- 1/4 cup powdered sugar
- 6 oz semi-sweet chocolate, chopped
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add in the eggs, milk, oil, and vanilla extract. Beat until smooth.
- Gradually pour in the boiling water and mix until thin. Pour the batter into prepared pans.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean. Let the cakes cool completely in the pans.
- To prepare the mousse, melt the semi-sweet chocolate over a double boiler or in the microwave. Cool to room temperature.
- In another bowl, whip heavy cream with powdered sugar until soft peaks form. Fold in the cooled chocolate gently until smooth.
- For the ganache, pour heavy cream over chopped semi-sweet chocolate, let it sit for 2-3 minutes, then stir until smooth.
- Assemble the cake by placing one cake layer on a serving plate, spreading mousse on top, and then adding the second layer. Pour ganache over the top allowing it to drip down the sides.
- Decorate with chocolate shavings or cocoa powder. Let set for 30 minutes to an hour before serving.
Notes
Use high-quality chocolate for best flavor. Don’t overmix the batter, and ensure the cakes cool completely before frosting.
