Ingredients

  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1 cup hot water
  • 1 cup semi-sweet chocolate chips
  • 8 oz semi-sweet or dark chocolate, chopped
  • 1/2 cup heavy cream
  • 1 cup unsalted butter, softened
  • 2 1/2 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/4 cup milk
  • Chocolate shavings or curls for garnish
  • Additional chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper.
  2. In a large bowl, sift together the flour, baking powder, baking soda, salt, and cocoa powder.
  3. In a separate bowl, whisk together the sugar, vegetable oil, eggs, and vanilla extract until smooth.
  4. Add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until just combined. Stir in the hot water until the batter is smooth and thin. Fold in the chocolate chips.
  5. Divide the batter evenly among the prepared pans.
  6. Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
  7. For the ganache, combine chopped chocolate and heavy cream in a heatproof bowl. Microwave until melted and smooth. Let it cool to room temperature.
  8. For the frosting, beat softened butter until creamy. Gradually add powdered sugar, cocoa powder, salt, and vanilla. Add milk until the desired consistency is reached.
  9. To assemble, place one layer of cake on a serving plate and spread ganache on top. Repeat this with the other layers. Cover the entire cake with frosting and smooth the top and sides.
  10. Garnish with chocolate shavings or curls, and chill for 30 minutes before serving.

Notes

Serve with a dollop of whipped cream or vanilla ice cream for a delightful contrast. Store in an airtight container at room temperature for up to 3 days or refrigerate for about a week.
