Description

A rich and moist cake layered with three different types of chocolate, perfect for any special occasion or as a delightful dessert.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water or hot coffee
  • 1 cup unsalted butter (softened)
  • 3 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup heavy cream (plus more if needed)
  • 8 oz semisweet or dark chocolate (chopped)
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour three 8-inch round cake pans.
  2. Sift together the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  3. Add the eggs, whole milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until smooth.
  4. Slowly pour in the boiling water or hot coffee. The batter will be thin, which is normal.
  5. Divide the batter evenly among the three pans and bake for 30-35 minutes, or until a toothpick comes out clean.
  6. Allow the cakes to cool completely before removing them from the pans.
  7. Beat the softened butter in a bowl until creamy. Gradually add the powdered sugar and cocoa powder, alternating with the heavy cream, until you reach your desired consistency.
  8. Place one layer of the cake on a plate. Spread frosting on top, add the second layer, and repeat. Frost the sides and top of the cake.
  9. To make ganache, heat the cup of heavy cream until just about to boil, pour over chopped chocolate, and stir until smooth.
  10. Pour the ganache over the frosted cake, letting it drip down the sides.
  11. Chill the cake in the fridge for at least 30 minutes before serving.

Notes

Serve with whipped cream or vanilla ice cream and fresh berries for a fruity contrast. Store in an airtight container for up to 3 days or refrigerate for up to a week.
