- 1 1/2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder

- 2 large eggs

- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 8 oz semi-sweet chocolate, chopped
- 1 1/2 cups heavy cream
- 1/4 cup powdered sugar
- 6 oz semi-sweet chocolate, chopped
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add the eggs, milk, oil, and vanilla. Beat until smooth.
- Gradually mix in the boiling water until the batter is thin and well combined. Pour into the prepared pans and bake for 30-35 minutes. Let the cakes cool completely.
- Melt the semi-sweet chocolate in a heatproof bowl over a double boiler or in the microwave. Allow it to cool to room temperature.
- In another bowl, whip the heavy cream, powdered sugar, and vanilla until soft peaks form. Gently fold in the cooled chocolate until fluffy.
- Pour heated heavy cream over the chopped chocolate for the ganache. Let sit for 2-3 minutes, then stir until smooth.
- Assemble the cake: Place one cake layer on a serving plate, spread chocolate mousse over the top, and add the second layer. Pour ganache over the cake, letting it drip down the sides.
- Decorate with chocolate shavings or cocoa powder, and let set for 30-60 minutes before slicing.
