Ingredients

  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 8 oz semi-sweet chocolate, chopped
  • 1 1/2 cups heavy cream
  • 1/4 cup powdered sugar
  • 6 oz semi-sweet chocolate, chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add the eggs, milk, oil, and vanilla. Beat until smooth.
  3. Gradually mix in the boiling water until the batter is thin and well combined. Pour into the prepared pans and bake for 30-35 minutes. Let the cakes cool completely.
  4. Melt the semi-sweet chocolate in a heatproof bowl over a double boiler or in the microwave. Allow it to cool to room temperature.
  5. In another bowl, whip the heavy cream, powdered sugar, and vanilla until soft peaks form. Gently fold in the cooled chocolate until fluffy.
  6. Pour heated heavy cream over the chopped chocolate for the ganache. Let sit for 2-3 minutes, then stir until smooth.
  7. Assemble the cake: Place one cake layer on a serving plate, spread chocolate mousse over the top, and add the second layer. Pour ganache over the cake, letting it drip down the sides.
  8. Decorate with chocolate shavings or cocoa powder, and let set for 30-60 minutes before slicing.
