- 1 1/2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 1 1/2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 1 cup semi-sweet chocolate chips
- 8 oz dark chocolate, chopped (for ganache)
- 1 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- Add the eggs, milk, oil, and vanilla to the dry ingredients. Mix until smooth.
- Carefully stir in the boiling water. The batter will be thin, which is perfect for a moist cake.
- Divide the batter evenly between the prepared cake pans.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cakes cool completely.
- To make the ganache, heat the heavy cream until just boiling, then pour it over the chopped dark chocolate. Let it sit for a few minutes, then stir until smooth.
- Once the cakes are cooled, layer them with the chocolate ganache.
Notes
Serve with fresh fruit or whipped cream for an extra touch. Store in an airtight container at room temperature for up to three days.
