- 4 egg whites, room temperature
- 1 1/4 cups granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1 teaspoon cream of tartar (optional)
- 1/4 cup sliced almonds
- 1 1/2 cups heavy cream
- 3 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 1 pint mixed berries (such as strawberries, blueberries, and raspberries)
- 2 tablespoons sliced almonds
Instructions
- Preheat the oven to 350°F (175°C) and line a 15’x10′ jelly roll pan with parchment paper.
- In a mixer, whip the egg whites until foamy, gradually adding sugar, vanilla, almond extract, and cream of tartar, whipping until stiff peaks form.
- Spread the meringue in the pan and sprinkle with sliced almonds. Bake for about 25 minutes or until golden brown. Cool completely.
- While cooling, whip cream and sugar until stiff peaks form, then stir in vanilla.
- Remove meringue from the pan and spread whipped cream over it, add berries, and roll it tightly.
- Transfer to a platter, spread remaining cream on top, garnish with berries and almonds, and optionally dust with powdered sugar. Slice and serve.
Notes
Ensure egg whites are at room temperature for the best volume. Store leftovers in the refrigerator for optimal freshness.
