A delightful fruit cake packed with colorful candied fruit and nuts, perfect for sharing during the festive season.

- 1 cup dried fruit mix (cherries, pineapple, apricots, etc.)
- 1/4 cup green candied cherries, halved
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup granulated sugar
- 3 large eggs
- 1/4 cup red candied cherries, halved
- 1/2 cup nuts (walnuts, pecans, chopped)
- 1/4 cup additional candied cherries, halved
Instructions
- Preheat your oven to 325°F (163°C) and grease a loaf pan with flour.
- In a medium bowl, mix all-purpose flour, baking powder, and salt. Set it aside.
- In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually mix the dry ingredients into the wet ingredients, alternating with the milk. Mix until just combined.
- Fold in the dried fruit mix and nuts.
- Pour the batter into the prepared pan and top with halved candied cherries.
- Bake for 70-80 minutes. Check if it’s done by inserting a toothpick; it should come out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack.
Notes
Serve plain, with a dusting of powdered sugar, or with whipped cream or ice cream. Can be made ahead of time and stored properly for better flavor.
