Description

A delightful fruit cake packed with colorful candied fruit and nuts, perfect for sharing during the festive season.


Ingredients

  • 1 cup dried fruit mix (cherries, pineapple, apricots, etc.)
  • 1/4 cup green candied cherries, halved
  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup red candied cherries, halved
  • 1/2 cup nuts (walnuts, pecans, chopped)
  • 1/4 cup additional candied cherries, halved

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a loaf pan with flour.
  2. In a medium bowl, mix all-purpose flour, baking powder, and salt. Set it aside.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually mix the dry ingredients into the wet ingredients, alternating with the milk. Mix until just combined.
  6. Fold in the dried fruit mix and nuts.
  7. Pour the batter into the prepared pan and top with halved candied cherries.
  8. Bake for 70-80 minutes. Check if it’s done by inserting a toothpick; it should come out clean.
  9. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack.

Notes

Serve plain, with a dusting of powdered sugar, or with whipped cream or ice cream. Can be made ahead of time and stored properly for better flavor.
