Description

A fresh and vibrant salad showcasing Mediterranean flavors, featuring tomatoes, cucumbers, feta cheese, and olives.


Ingredients

  • 1 cup cherry tomatoes, halved or quartered
  • 1 cup cucumber slices
  • 1/2 small red onion, thinly sliced
  • 1/2 green bell pepper, thinly sliced
  • 68 Kalamata or green olives
  • 1 thick slice of feta cheese
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp dried oregano
  • Salt & freshly cracked black pepper, to taste
  • Fresh thyme (optional, for garnish)

Instructions

  1. Chop: Slice tomatoes, cucumber, onion, and bell pepper into bite-sized pieces.
  2. Assemble: Add the chopped vegetables and olives to a large serving bowl or plate.
  3. Top: Place a thick slab of feta cheese right on top of the salad.
  4. Dress: Drizzle with extra virgin olive oil and sprinkle with dried oregano, salt, and freshly cracked black pepper. Add fresh thyme if desired.
  5. Serve: Enjoy the salad fresh as a side dish or light lunch!

Notes

For best flavor, use fresh, ripe vegetables. Store dressing separately for freshness. Salad is ideal when made fresh.
