Ingredients

- 1 cup cherry tomatoes, halved or quartered
- 1 cup cucumber slices
- 1/2 small red onion, thinly sliced
- 1/2 green bell pepper, thinly sliced
- 6–8 Kalamata or green olives
- 1 thick slice of feta cheese
- 1 tbsp extra virgin olive oil
- 1/2 tsp dried oregano
- Salt & freshly cracked black pepper, to taste
- Fresh thyme (optional, for garnish)
Instructions
- Chop: Slice tomatoes, cucumber, onion, and bell pepper into bite-sized pieces.
- Assemble: Add the chopped vegetables and olives to a large serving bowl or plate.
- Top: Place a thick slab of feta cheese right on top of the salad.
- Dress: Drizzle with extra virgin olive oil and sprinkle with dried oregano, salt, and freshly cracked black pepper. Add fresh thyme if desired.
- Serve: Enjoy the salad fresh as a side dish or light lunch!
Notes
For best flavor, use fresh, ripe vegetables. Store dressing separately for freshness. Salad is ideal when made fresh.
