- 1 1/2 cups cookie crumbs (Digestive, savoiardi, or graham cracker crumbs)
- 1/4 cup butter, melted
- 8 ounces cream cheese, at room temperature
- 3/4 cup powdered sugar
- 3/4 teaspoon vanilla extract
- 1 cup whole cream
- 1/4 cup toffee bits
- 1 tablespoon gelatin
- 2 tablespoons milk
- Caramel sauce, to taste
- 1 cup broken chocolate caramel bars
Instructions
- Prepare the Base: In a bowl, combine the cookie crumbs with melted butter, mix well, and press into the bottom of a 7-8 inch springform pan. Refrigerate for 20-30 minutes to set.
- Prepare the Cheesecake Filling: Beat the cream cheese, powdered sugar, and vanilla extract until creamy. Whip the cream until stiff peaks form. Dissolve the gelatin in milk over low heat and mix it into part of the cream cheese mixture. Fold in the whipped cream and toffee bits.
- Assemble the Cheesecake: Pour the cheesecake filling over the chilled cookie base, smooth the top, and chill in the refrigerator for 4-5 hours or overnight until set.
- Finish and Serve: Drizzle caramel sauce over the cheesecake and sprinkle with broken chocolate caramel bars before serving.
Notes
Store leftovers in the fridge for 3-5 days. Use room temperature cream cheese for a smoother filling and avoid over-whipping the cream.
