Description
A delightful dessert that transforms traditional tiramisu into a beautiful log shape, combining rich coffee and mascarpone flavors in a light, fluffy cake.

- 4 eggs
- 100 g sugar
- 100 g flour
- 250 g mascarpone
- 150 ml whole liquid cream
- 3 tablespoons strong coffee
- 3 tablespoons unsweetened cocoa powder
- 50 g icing sugar
- 1 tablespoon vanilla extract
- A few biscuits (optional)
Instructions
- Preheat your oven to 180 °C (350 °F) and line a baking sheet with parchment paper.
- Separate the egg whites from the egg yolks. In a bowl, whip the egg yolks with sugar until the mixture is white and foamy.
- Gently fold in the flour until well combined.
- In another bowl, whip the egg whites until stiff peaks form. Gently fold them into the egg yolk mixture.
- Pour the batter onto the parchment-lined baking sheet and spread it evenly.
- Bake for about 10-12 minutes until lightly golden.
- While the cake cools, prepare the cream by whipping the cold liquid cream with icing sugar until stiff.
- Add the mascarpone and vanilla extract to the whipped cream, mixing until smooth and firm.
- Once the genoise (cake) has cooled, lightly soak it in the strong coffee.
- Spread half of the mascarpone cream inside and roll the genoise back up gently to form the log.
- Cover the log with the remaining mascarpone cream, and sprinkle cocoa powder on top. Optionally, add some biscuits on top.
- Refrigerate the log for at least 120 minutes before serving.
Notes
For a unique twist, add chocolate or fruit puree to the mascarpone cream or use different types of biscuits.
