Tiramisu Log with Mascarpone

Description

A delightful dessert that transforms traditional tiramisu into a beautiful log shape, combining rich coffee and mascarpone flavors in a light, fluffy cake.


Ingredients

Scale
  • 4 eggs
  • 100 g sugar
  • 100 g flour
  • 250 g mascarpone
  • 150 ml whole liquid cream
  • 3 tablespoons strong coffee
  • 3 tablespoons unsweetened cocoa powder
  • 50 g icing sugar
  • 1 tablespoon vanilla extract
  • A few biscuits (optional)

Instructions

  1. Preheat your oven to 180 °C (350 °F) and line a baking sheet with parchment paper.
  2. Separate the egg whites from the egg yolks. In a bowl, whip the egg yolks with sugar until the mixture is white and foamy.
  3. Gently fold in the flour until well combined.
  4. In another bowl, whip the egg whites until stiff peaks form. Gently fold them into the egg yolk mixture.
  5. Pour the batter onto the parchment-lined baking sheet and spread it evenly.
  6. Bake for about 10-12 minutes until lightly golden.
  7. While the cake cools, prepare the cream by whipping the cold liquid cream with icing sugar until stiff.
  8. Add the mascarpone and vanilla extract to the whipped cream, mixing until smooth and firm.
  9. Once the genoise (cake) has cooled, lightly soak it in the strong coffee.
  10. Spread half of the mascarpone cream inside and roll the genoise back up gently to form the log.
  11. Cover the log with the remaining mascarpone cream, and sprinkle cocoa powder on top. Optionally, add some biscuits on top.
  12. Refrigerate the log for at least 120 minutes before serving.

Notes

For a unique twist, add chocolate or fruit puree to the mascarpone cream or use different types of biscuits.
