- 1 cup mascarpone cheese
- 1 cup crushed ladyfingers (or sponge cake)
- 2 tablespoons espresso or strong coffee, cooled
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- Cocoa powder (for coating)
- Dark or white chocolate (melted for coating)
Instructions
- In a mixing bowl, combine the mascarpone cheese, crushed ladyfingers, espresso, sugar, and vanilla extract. Mix until well combined and the mixture holds together.
- Scoop out tablespoon-sized portions of the mixture and roll them into balls.
- Place the balls on a baking sheet lined with parchment paper.
- Freeze for 1–2 hours or until firm.
- Dip the frozen balls into melted chocolate or dust them with cocoa powder and enjoy!
Notes
Store in an airtight container in the refrigerator for up to a week. Can be frozen for longer storage. Thaw in the refrigerator before serving.
