Ingredients

Scale
  • 1 cup mascarpone cheese
  • 1 cup crushed ladyfingers (or sponge cake)
  • 2 tablespoons espresso or strong coffee, cooled
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • Cocoa powder (for coating)
  • Dark or white chocolate (melted for coating)

Instructions

  1. In a mixing bowl, combine the mascarpone cheese, crushed ladyfingers, espresso, sugar, and vanilla extract. Mix until well combined and the mixture holds together.
  2. Scoop out tablespoon-sized portions of the mixture and roll them into balls.
  3. Place the balls on a baking sheet lined with parchment paper.
  4. Freeze for 1–2 hours or until firm.
  5. Dip the frozen balls into melted chocolate or dust them with cocoa powder and enjoy!

Notes

Store in an airtight container in the refrigerator for up to a week. Can be frozen for longer storage. Thaw in the refrigerator before serving.
