Ingredients

  • 1 cup mascarpone cheese
  • 1 cup crushed ladyfingers (or sponge cake)
  • 2 tablespoons espresso or strong coffee, cooled
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • Cocoa powder for coating
  • Dark or white chocolate, melted for coating

Instructions

  1. In a mixing bowl, combine the mascarpone cheese, crushed ladyfingers, espresso, sugar, and vanilla extract. Mix until well combined and the mixture holds together.
  2. Scoop out tablespoon-sized portions of the mixture and roll them into balls.
  3. Place the balls on a baking sheet lined with parchment paper.
  4. Place the truffles in the freezer for 1–2 hours or until firm.
  5. Dip the frozen chocolate balls into melted chocolate or dust with cocoa powder and enjoy!

Notes

Serve in small paper cups for an elegant touch. Store in an airtight container in the refrigerator for up to one week or freeze for up to a month.
