Description

A delightful dessert combining the rich flavors of traditional tiramisu and creamy cheesecake, featuring layers of cookie crust, creamy filling, and coffee-soaked ladyfingers.


Ingredients

  • 250g graham or Digestive cookies
  • 2 tbsp Dutch-processed cocoa powder
  • 75g unsalted butter, melted
  • 250ml strong black coffee
  • 1 tbsp Amaretto (optional)
  • 600g cream cheese
  • 165g mascarpone cheese
  • 150g powdered sugar
  • 1 1/2 tsp vanilla paste
  • 360g heavy cream
  • 1/2 pack of ladyfingers
  • 230g heavy cream (for topping)
  • 2 tbsp powdered sugar (for topping)
  • 1/2 tsp vanilla paste (for topping)
  • Dutch-processed cocoa powder for dusting

Instructions

  1. Brew 250ml of strong black coffee and let it cool. Add Amaretto if desired, and set aside.
  2. In a food processor, pulse cookies and cocoa powder into fine crumbs. Add melted butter and mix until combined. Press the mixture into a 9-inch springform pan to form a crust. Chill in the fridge.
  3. Beat the cream cheese until smooth. Add mascarpone, powdered sugar, and vanilla paste; mix until creamy. Whip the heavy cream until stiff peaks form, then fold it into the cheesecake mixture.
  4. Spread half of the cheesecake mixture over the crust. Dip ladyfingers quickly into the coffee and arrange them over the filling. Spread remaining cheesecake mixture on top and smooth with a spatula. Refrigerate for at least 8 hours or overnight to set.
  5. Whip heavy cream, powdered sugar, and vanilla paste until stiff peaks form. Spread over cheesecake and dust with cocoa powder. Use a knife dipped in hot water for clean slices.

Notes

Store any leftovers in the refrigerator for up to 3 days. For stronger coffee flavor, add more coffee to the filling. You can freeze it without the whipped cream topping for up to 2 months.
