Description

A delightful dessert that combines the rich flavors of classic tiramisu and creamy cheesecake into one indulgent treat.


Ingredients

  • 250g graham or Digestive cookies
  • 2 tbsp Dutch-processed cocoa powder
  • 75g unsalted butter, melted
  • 250ml strong black coffee
  • 1 tbsp Amaretto (optional)
  • 600g cream cheese
  • 165g mascarpone cheese
  • 150g powdered sugar
  • 1 1⁄2 tsp vanilla paste
  • 360g heavy cream
  • 1/2 pack of ladyfingers
  • 230g heavy cream (for topping)
  • 2 tbsp powdered sugar (for topping)
  • 1/2 tsp vanilla paste (for topping)
  • Dutch-processed cocoa powder for dusting

Instructions

  1. Prepare the Coffee: Brew 250ml of strong black coffee and let it cool. Add Amaretto if desired. Set aside for dipping the ladyfingers.
  2. Make the Cookie Crust: In a food processor, pulse cookies and cocoa powder into fine crumbs. Add melted butter and mix until combined. Press this mixture into a 9-inch springform pan to form a solid crust. Chill in the fridge.
  3. Prepare Cheesecake Filling: Beat the cream cheese until smooth. Add mascarpone, powdered sugar, and vanilla paste; mix until creamy. Whip the heavy cream until stiff peaks form, and then fold it into the cheesecake mixture.
  4. Assemble Cheesecake: Spread half of the cheesecake mixture over the crust. Dip the ladyfingers quickly in the coffee and arrange them over the filling. Add the remaining cheesecake mixture on top and smooth it with a spatula. Refrigerate for at least 480 minutes (or overnight) to set.
  5. Decorate: Whip the heavy cream, powdered sugar, and vanilla paste until stiff peaks form. Spread this over the cheesecake and dust with cocoa powder. For clean slices, use a knife dipped in hot water.
  6. Serve chilled in wedges with optional toppings of whipped cream or cocoa powder.

Notes

Store leftovers in the refrigerator for up to 3 days. For freezing, wrap well and store without whipped cream topping for up to 2 months.
