Tiramisu Cheesecake

Description

A delightful fusion of creamy cheesecake and classic tiramisu flavors, perfect for any occasion.


Ingredients

  • 250 g graham cookies or Digestive cookies
  • 2 tbsp Dutch processed unsweetened cocoa powder
  • 75 g butter
  • 250 ml strong black coffee
  • 1 tbsp Amaretto (optional)
  • 600 g cream cheese
  • 165 g mascarpone cheese
  • 150 g powdered sugar
  • 1 ½ tsp vanilla paste
  • 360 g heavy cream (for filling)
  • ½ pack of ladyfingers
  • 230 g heavy cream (for topping)
  • 2 tbsp powdered sugar (for topping)
  • ½ tsp vanilla paste (for topping)
  • Dutch processed unsweetened cocoa powder for dusting

Instructions

  1. Brew strong black coffee and mix in Amaretto (if using). Let it cool.
  2. In a food processor, blend graham crackers or Digestive cookies with cocoa powder until fine.
  3. Melt the butter and combine it with the cookie crumbs.
  4. Press the mixture into a lined 23 cm / 9-inch springform pan and refrigerate.
  5. Cream the cream cheese on low speed for 1 minute using a hand mixer or stand mixer with a paddle attachment.
  6. Add mascarpone cheese, powdered sugar, and vanilla paste. Mix on medium-high speed until smooth, about 1 minute. Scrape the sides and mix for an additional 30 seconds.
  7. Slowly add the heavy cream and whisk until stiff peaks form.
  8. Spread half of the cheesecake filling over the crust.
  9. Quickly dip ladyfingers in the cooled coffee (one dip per side).
  10. Arrange the dipped ladyfingers in a single layer over the cheesecake filling.
  11. Spread the remaining cheesecake filling on top, smooth it out with a spatula, cover with cling film, and refrigerate for 8 hours or overnight.
  12. Whip heavy cream, powdered sugar, and vanilla paste until stiff peaks form and spread it on top of the cheesecake.
  13. Before serving, dust the top with cocoa powder. For clean slices, dip a knife in hot water, dry it, and slice the cheesecake.

Notes

Make sure your cream cheese and mascarpone cheese are at room temperature for easier mixing. Don’t soak the ladyfingers too long in coffee to avoid sogginess.
