- 1 box (18.25 oz) brownie mix
- 2 eggs
- 1/2 cup vegetable oil
- 1/4 cup water
- 1/2 cup brewed espresso, cooled
- 1/4 cup coffee liqueur (e.g., Kahlua)
- 1 cup mascarpone cheese
- 1/2 cup powdered sugar
- 1/4 cup caramel sauce
- Cocoa powder, for dusting
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×9-inch baking pan by greasing and flouring it.
- In a large mixing bowl, whisk together the brownie mix, eggs, vegetable oil, and water until smooth.
- Pour half of the brownie batter into the prepared pan.
- In another bowl, combine the cooled brewed espresso and coffee liqueur, stirring well.
- Pour half of the espresso mixture over the brownie batter.
- Blend the mascarpone cheese and powdered sugar until smooth and creamy; spread this mixture over the espresso layer.
- Drizzle caramel sauce over the mascarpone layer.
- Pour the remaining brownie batter on top and drizzle the rest of the espresso mixture over it.
- Gently swirl the layers together with a knife.
- Bake in the oven for 25-30 minutes; check for doneness with a toothpick.
- Let cool completely in the pan on a wire rack before slicing, then dust with cocoa powder before serving.
Notes
Serve with vanilla ice cream or whipped cream, and add more caramel if desired. Can be stored at room temperature for 3 days or in the refrigerator for a week.
