Ingredients

- 250 g mascarpone
- 3 eggs (separated into yolks and whites)
- 100 g sugar
- 2 lemons (zest and juice)
- 200 ml water
- 150 g ladyfinger biscuits
- 3 tablespoons limoncello (optional)
- 2 tablespoons sugar for the syrup
- Lemon zest and mint leaves for garnish
Instructions
- Prepare the lemon syrup: Heat the water with the sugar and lemon juice. Let it cool, then add limoncello if you want.
- Make the cream: Whisk the egg yolks with the sugar until light. Then, add mascarpone and lemon zest.
- Whip the egg whites: Beat the egg whites until stiff peaks form. Carefully fold them into the cream mixture to keep it light and fluffy.
- Assemble the tiramisu: Dip the ladyfingers in the syrup and alternate layers of soaked biscuits and cream in a serving dish.
- Refrigerate and enjoy: Let it sit in the fridge for at least 240 minutes before serving, to let the flavors meld together.
