Description

A refreshing twist on the classic Italian dessert, combining bright lemon flavor with creamy mascarpone for a light treat.


Ingredients

  • 250 g mascarpone
  • 3 eggs (separated into yolks and whites)
  • 100 g sugar
  • 2 lemons (zest and juice)
  • 200 ml water
  • 150 g ladyfinger biscuits
  • 3 tablespoons limoncello (optional)
  • 2 tablespoons sugar for the syrup
  • Lemon zest and mint leaves for garnish

Instructions

  1. Prepare the lemon syrup: Heat the water with the sugar and lemon juice. Let it cool, then add limoncello if you want.
  2. Make the cream: Whisk the egg yolks with the sugar until light. Then, add mascarpone and lemon zest.
  3. Whip the egg whites: Beat the egg whites until stiff peaks form. Carefully fold them into the cream mixture to keep it light and fluffy.
  4. Assemble the tiramisu: Dip the ladyfingers in the syrup and alternate layers of soaked biscuits and cream in a serving dish.
  5. Refrigerate and enjoy: Let it sit in the fridge for at least 240 minutes before serving, to let the flavors meld together.
