A rich and creamy dessert featuring three layers of chocolate mousse: dark, milk, and white, all on a chocolate cookie crust.

- 1 1/2 cups chocolate cookie crumbs
- 1/4 cup unsalted butter, melted
- 1 1/2 cups dark chocolate, chopped
- 1 1/2 cups milk chocolate, chopped
- 1 1/2 cups white chocolate, chopped
- 4 cups heavy cream, divided
- 3/4 cup granulated sugar, divided
- 3 large eggs, yolks and whites separated
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons unflavored gelatin powder
- 6 tablespoons water
- 1/2 cup heavy cream
- 1/2 cup chocolate chips
- Additional chocolate shavings or cocoa powder for topping
Instructions
- Make the crust: In a bowl, mix the chocolate cookie crumbs with melted butter. Press the mixture firmly into the bottom of a 9-inch springform pan. Refrigerate for 30 minutes.
- Prepare the gelatin: In a small bowl, sprinkle the gelatin over 6 tablespoons of water. Let it sit for 5 to 10 minutes to bloom.
- Make the dark chocolate mousse: Melt the dark chocolate in a heatproof bowl. In a separate bowl, whisk 1 1/4 cups of heavy cream until it forms soft peaks. In another bowl, beat the egg yolks with 1/4 cup of sugar until pale. Gently fold the melted chocolate into the yolk mixture. Then, fold in the whipped cream. Pour this mixture over the crust and refrigerate for 30 minutes.
- Repeat for the milk and white chocolate layers: Follow the same steps as above for the milk chocolate and then the white chocolate, pouring each layer on top of the previous one after it has set slightly. Refrigerate the cake for at least 4 hours, or overnight, until firm.
- Prepare the ganache: Heat 1/2 cup of heavy cream until it simmers. Pour it over the chocolate chips and stir until smooth. Let it cool slightly before drizzling over the top of the cake.
- Decorate: Garnish the cake with whipped cream, chocolate shavings, or fresh fruit if desired.
Notes
Store any leftover cake in the refrigerator for up to three days. It can be frozen, though the texture may change slightly upon thawing.
