Ingredients

  • 2 tablespoons Dutch process cocoa (optional)
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 2 eggs
  • 1 cup buttermilk
  • 1 cup strong black coffee
  • 1/2 cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • Frosting of choice (e.g., Homemade Buttercream or Chocolate Frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round baking pans or one 13x9x2-inch pan.
  2. In a large bowl, combine the sugar, flour, cocoa(s), baking soda, baking powder, and salt. Mix on low until well combined.
  3. Add eggs, buttermilk, coffee, oil, and vanilla. Beat on medium speed for about 2 minutes until smooth.
  4. Pour the batter into the prepared pans. Bake for 30-35 minutes for round pans or 35-40 minutes for a rectangular pan, or until a toothpick comes out clean.
  5. Cool the cakes in the pans for 10 minutes, then remove to wire racks to cool completely.
  6. Frost the cake with your choice of frosting and enjoy!

Notes

For extra chocolate flavor, use a mix of cocoa types. Store in an airtight container for up to three days or refrigerate for a week.
