Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 tablespoons Dutch process cocoa (optional)
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 2 eggs
  • 1 cup buttermilk
  • 1 cup strong black coffee
  • 1/2 cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • Frosting of choice (e.g., Homemade Buttercream or Chocolate Frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round baking pans or one 13x9x2-inch pan.
  2. In a large bowl, combine the sugar, flour, cocoa(s), baking soda, baking powder, and salt. Mix on low until well combined.
  3. Add eggs, buttermilk, coffee, oil, and vanilla, and beat on medium speed for about 2 minutes until the batter is smooth and thin.
  4. Pour the batter evenly into the prepared pans. Bake for 30-35 minutes for round pans or 35-40 minutes for the rectangular pan, or until a toothpick inserted into the center comes out clean.
  5. Let the cakes cool in the pans for 10 minutes, then remove them to wire racks to cool completely.
  6. Once cooled, frost the cake with your choice of frosting and enjoy!

Notes

For a sweeter cake, increase the sugar by a quarter cup. Store tightly covered for up to three days at room temperature, a week in the fridge, or freeze for up to three months.
