Description

A fresh and vibrant Thai Peanut Noodle Salad with soft noodles, colorful veggies, and a creamy peanut sauce.


Ingredients

  • 8 oz spaghetti noodles
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly sliced
  • 1/4 cup chopped cilantro
  • 1/4 cup crushed peanuts (plus extra for garnish)
  • 1/4 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • 1 garlic clove, minced
  • 1/2 tsp sriracha (optional)
  • Warm water to thin, if needed

Instructions

  1. Boil noodles according to package directions. Drain and rinse under cold water.
  2. In a bowl, whisk together all peanut sauce ingredients until smooth.
  3. Toss noodles with carrots, bell pepper, and cilantro. Pour sauce over and mix well.
  4. Top with crushed peanuts and extra cilantro before serving.

Notes

Great for meal prep! Store in the fridge for up to three days, refreshing with water if needed.
