A fresh and vibrant Thai Peanut Noodle Salad with soft noodles, colorful veggies, and a creamy peanut sauce.
Ingredients

- 8 oz spaghetti noodles
- 1 cup shredded carrots
- 1 red bell pepper, thinly sliced
- 1/4 cup chopped cilantro
- 1/4 cup crushed peanuts (plus extra for garnish)
- 1/4 cup creamy peanut butter
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey or maple syrup
- 1 tsp sesame oil
- 1 garlic clove, minced
- 1/2 tsp sriracha (optional)
- Warm water to thin, if needed
Instructions
- Boil noodles according to package directions. Drain and rinse under cold water.
- In a bowl, whisk together all peanut sauce ingredients until smooth.
- Toss noodles with carrots, bell pepper, and cilantro. Pour sauce over and mix well.
- Top with crushed peanuts and extra cilantro before serving.
Notes
Great for meal prep! Store in the fridge for up to three days, refreshing with water if needed.
