- 1/2 lb shrimp, peeled & deveined
- 1/4 cup teriyaki sauce
- 1 tbsp soy sauce
- 1 tsp honey
- 1 tsp sesame oil
- 1 clove garlic, minced
- 1 cup cooked rice
- 1/2 cup diced pineapple
- 1/4 cup diced bell peppers
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tbsp chopped green onions
- 1/4 cup mashed avocado (optional)
- Sesame seeds for garnish
Instructions
- Marinate the shrimp in teriyaki sauce, soy sauce, honey, sesame oil, and garlic for 15 minutes.
- Sauté the shrimp until they are caramelized and cooked through.
- Stir-fry the pineapple, bell peppers, rice, soy sauce, and sesame oil together until everything is warm and mixed well.
- Press the rice mixture into a ring mold on your plate, then top it with the sautéed shrimp. Optionally, add a layer of mashed avocado on top.
- Sprinkle sesame seeds and chopped green onions on top before serving.
Notes
For best flavor, let the shrimp marinate longer than 15 minutes if you have time. You can use fresh or frozen pineapple; drain well if using canned. Feel free to add other vegetables like snap peas or carrots.
