Description

A flavorful mix of sweet pineapple, tender chicken, and savory teriyaki sauce served over fluffy jasmine rice.


Ingredients

  • 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1/2 cup teriyaki sauce
  • 1 tbsp soy sauce (low sodium recommended)
  • 1 tbsp honey or brown sugar
  • 1 cup jasmine rice
  • 1 cup pineapple chunks
  • 1 bell pepper (sliced)
  • 2 green onions (sliced)
  • 1 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine chicken pieces, teriyaki sauce, soy sauce, and honey or brown sugar. Marinate for at least 30 minutes.
  2. Cook jasmine rice according to package instructions.
  3. In a pan, heat vegetable oil over medium heat and add marinated chicken. Cook until browned and cooked through.
  4. Add bell pepper and pineapple chunks, cooking until heated through.
  5. Serve the chicken mixture over rice and garnish with green onions. Season with salt and pepper if desired.

Notes

For extra flavor, let the chicken marinate longer than 30 minutes. Fresh pineapple is recommended, but canned pineapple works as well.
