Ingredients

  • 1 chuck roast
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 4 cups beef broth
  • 4 potatoes, peeled and cubed
  • 1/2 cup milk
  • 2 tablespoons butter
  • 2 cups fresh spinach
  • 1 teaspoon red pepper flakes
  • 1 clove garlic, minced

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Season the chuck roast with salt and pepper. In a Dutch oven, heat olive oil over medium-high heat.
  3. Sear the roast on all sides until browned, then add beef broth.
  4. Cover the pot and transfer it to the oven, cooking for 3-4 hours or until the meat is fork-tender.
  5. Meanwhile, boil the potatoes in water until tender. Then drain them. Add milk and butter and mash until smooth.
  6. In a pan, sauté garlic in olive oil, add the spinach and red pepper flakes, cooking until just wilted.
  7. Serve the roast with mashed potatoes and spicy spinach on the side.

Notes

For added flavor, marinate the roast with your choice of spices the night before. Use fresh herbs like thyme or rosemary for extra aroma.
