- 200g of flour
- 100g of cold butter
- 50g of icing sugar
- 1 egg yolk
- 2 tablespoons of cold water
- 100g of almond powder
- 100g of softened butter
- 100g of sugar
- 2 eggs
- 1 tablespoon of flour
- 3 fresh pears
- Sliced almonds (optional)
Instructions
- Prepare the Shortcrust Pastry: In a mixing bowl, combine the flour, icing sugar, and cold butter. Use your fingers to mix until the mixture resembles breadcrumbs. Add the egg yolk and cold water. Mix to form a ball of dough. Wrap in plastic wrap and refrigerate for 30 minutes.
- Prepare the Almond Cream: In another bowl, mix the softened butter and sugar until smooth. Add the eggs one at a time, mixing well after each. Finally, stir in the almond powder and flour. Set this aside.
- Prepare the Pears: Peel the pears, cut them in half, and remove the cores. Slice them into thin pieces.
- Assemble the Tart: Roll out the chilled pastry dough on a lightly floured surface. Place it into a tart pan and prick the bottom with a fork. Spread the almond cream over the pastry, then arrange the sliced pears on top.
- Sprinkle sliced almonds on top, if using. Bake in a preheated oven at 180°C (about 350°F) for 35 to 40 minutes, or until the tart is golden brown.
Notes
Best served warm or at room temperature. Enjoy with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat.
