Ingredients

  • 1 cup roasted sweet potato cubes
  • 1/2 cup taco-seasoned ground beef
  • 1/4 cup homemade guacamole
  • 1/4 cup homemade pico de gallo
  • 2 tbsp sour cream
  • Salt and pepper to taste

Instructions

  1. Toss sweet potato cubes with olive oil, salt, and pepper. Roast at 400°F for 25 minutes until crispy and tender.
  2. Brown the ground beef in a skillet with taco seasoning.
  3. Mash avocado with lime juice, cilantro, salt, and pepper to make guacamole.
  4. Combine diced tomatoes, red onion, cilantro, and lime juice for pico de gallo.
  5. In a bowl, layer the roasted sweet potatoes, ground beef, guacamole, pico de gallo, and a dollop of sour cream.
