Instructions
- Toss sweet potato cubes with olive oil, salt, and pepper. Roast at 400°F for 25 minutes until crispy and tender.

- Mash avocado with lime juice, cilantro, salt, and pepper to make guacamole.
- Combine diced tomatoes, red onion, cilantro, and lime juice for pico de gallo.
- In a bowl, layer the roasted sweet potatoes, ground beef, guacamole, pico de gallo, and a dollop of sour cream.
