Description

A delightful and hearty Taco Rice Casserole that combines the flavors of tacos with the comfort of a baked dish. Perfect for busy weeknights and family gatherings.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 3 cups cooked rice
  • 1 can (15 oz) black beans, drained
  • 1 cup corn kernels (canned or frozen)
  • 1 cup diced tomatoes
  • 1 1/2 cups shredded cheddar cheese
  • 2 green onions, sliced
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a skillet, brown the ground beef over medium heat. Drain excess fat and stir in the taco seasoning with 1/4 cup water. Simmer for 5 minutes until well combined.
  2. In a greased baking dish, spread the cooked rice. Layer it with the seasoned beef, black beans, corn, and diced tomatoes.
  3. Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
  4. Bake in a preheated oven at 375°F (190°C) for 15–20 minutes, or until the cheese is melted and bubbly.
  5. Once out of the oven, top with sliced green onions and fresh cilantro. Serve hot!

Notes

Feel free to customize with different proteins or vegetables according to your taste. This dish is also great for meal prep and leftovers.
