- 3/4 cup all-purpose flour
- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 4 large eggs
- 3/4 cup granulated sugar
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup heavy whipping cream, chilled
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup cherry pie filling or fresh cherries, chopped
- Grated chocolate or chocolate shavings
- Fresh cherries
Instructions
- Preheat your oven to 350°F (175°C). Grease a 10×15-inch jelly roll pan and line it with parchment paper.
- In a bowl, sift together the flour, cocoa powder, baking powder, and salt.
- In a separate bowl, whisk the eggs and sugar until thick and pale. Add the oil and vanilla extract, mixing well.
- Gently fold in the dry ingredients until combined.
- Pour the batter into the prepared pan and spread it evenly. Bake for 10-12 minutes or until the cake springs back when touched.
- While the cake is still warm, invert it onto a clean kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper and roll the cake up with the towel. Let it cool completely.
- In a chilled bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.
- Once the cake has cooled, unroll it and spread a generous layer of whipped cream over the surface. Add chopped cherries or cherry pie filling and gently roll it up without the towel.
- Garnish with grated chocolate and fresh cherries on top for a beautiful presentation. Slice and enjoy!
