A delightful dessert that combines the lightness of a Swiss roll with the rich flavors of Black Forest cake, featuring chocolate sponge, whipped cream, and cherries.

- 4 large eggs
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3/4 cup all-purpose flour
- 1/4 tsp baking powder
- 1/4 tsp salt
- 2 tbsp cocoa powder
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract (for whipped cream)
- 1 jar (14 oz) maraschino cherries (drained)
- 1/4 cup dark chocolate shavings
Instructions
- Preheat your oven to 350°F (175°C).
- Line a 10×15-inch baking sheet with parchment paper.
- In a mixing bowl, beat the eggs and sugar until thick and pale.
- Add the vanilla extract to the mixture.
- Sift in the flour, cocoa powder, baking powder, and salt. Gently fold until combined.
- Pour the batter onto the prepared baking sheet and spread evenly.
- Bake for 10-12 minutes, or until the cake is springy to the touch.
- Let the cake cool for 5 minutes, then roll it up in the parchment paper and allow it to cool completely.
- In another bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- Unroll the cooled cake and spread the whipped cream over the top. Add the maraschino cherries, then roll the cake back up.
- Finish by topping with dark chocolate shavings.
Notes
Be gentle when folding the dry ingredients into the egg mixture to keep the batter light and fluffy. Use very cold heavy cream for better whipping results.
