A delightful dessert that combines the airy texture of a Swiss roll with the rich flavors of Black Forest cake, featuring a soft chocolate sponge, creamy whipped cream, and tart cherries.

  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup all-purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 2 cups pitted cherries
  • 1/4 cup granulated sugar (for filling)
  • 1 tbsp cornstarch
  • 1 tbsp water
  • 1 1/2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract (for cream)
  • Extra cherries for garnish
  • Chocolate shavings or cocoa powder for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 10×15-inch jelly roll pan.
  2. In a large bowl, beat the eggs, sugar, and vanilla until thick and pale, about 5 minutes.
  3. Sift the cocoa powder, flour, baking powder, and salt together. Gently fold this mixture into the egg mixture until combined. Pour into the prepared pan and spread evenly.
  4. Bake for 12-15 minutes or until the cake is springy to the touch.
  5. While the cake cools, make the cherry filling. In a saucepan, cook the cherries and sugar over medium heat until softened. Mix cornstarch with water and stir it into the cherries, cooking until thickened. Let it cool.
  6. In another bowl, beat the chilled heavy cream, powdered sugar, and vanilla until stiff peaks form.
  7. Once the cake is cool, spread the whipped cream over the top. Spoon the cherry filling on top of the whipped cream.
  8. Roll the cake from one short end to the other to form a log. Chill in the refrigerator for at least 1 hour.
  9. Before serving, decorate with extra cherries and chocolate shavings or a dusting of cocoa powder. Slice and enjoy!

Notes

Make sure to beat the eggs until thick and pale for the best texture. Let the cake cool completely before rolling.
